I love to make chicken pot pie casserole. Being that it’s ridiculously easy to make is probably the main reason I love to make it. I can’t say it’s quick, but only because it needs about an hour to bake. As far as actually putting it all together is crazy simple. Join me as I show you just how easy it is to make this delicious chicken pot pie casserole.

This Chicken Pot Pie Casserole is the simple version of the classic Chicken Pot Pie recipe. With very little mixing it’s basically a dump-and-bake dinner recipe all will love.

I like to consider this chicken pot pie recipe a casserole since it’s made in a casserole dish. But others would argue and say it’s a chicken pot pie cobbler or even a chicken cobbler. Call it whatever you want this shit is delicious no matter the name is.

The ONLY downside to this recipe, which I mentioned earlier, is it takes about an hour to bake. But that only means that you can dump everything in the casserole dish and still have time to finish up something else while you wait; dishes, laundry, picking up the living room or watering the plants. Just whatever.

But do you want to know what I like to do when I have spare time while dinner is cooking, insert evil grin? Two of my biggest vices are that I love to read, I just can’t get enough of the spicey books, and watch Netflix.

Here is my secret to looking busy… I usually stand at the stove either reading my book or catching up on my latest binge-worthy show on Netflix. You can sit at the dining room table if you want. The trick is to stay in the kitchen. I can’t stress this enough.

And keep your ears on high alert at all times. This is for when someone walks in, like the hubs or one of the kids asking you to do something. You can set that shit aside with the quickness and make it look like you’re slaving away at dinner too busy to do what they ask. Tell them tough shits, they are on their own otherwise they don’t get to eat cause you’re busy, LOL.

Now that you know my secret while I cook dinner, let’s move on to this easy chicken pot pie casserole recipe.

Chicken Pot Pie Casserole

First, you want to preheat your oven to 375°.

While your oven is warming up go ahead and start picking all the chicken from the bones of your rotisserie chicken.

If for any reason you don’t have or are unable to get a rotisserie chicken, that’s ok. I rarely have one and do my grocery shopping so early in the morning there aren’t any ready to buy yet. So I will throw 3 to 4 boneless/skinless chicken breasts in my crockpot with a 32oz carton of chicken broth, salt/pepper to taste, 2 dried basil leaves, and either a whole onion or minced onion (whatever I have on hand). Cook that on low for 4 to 6 hours. Once finished, pull the chicken out of the crockpot and shred up for the casserole. Frozen chicken is fine too, just cook on low for 6-8 hours.

Melt 1 stick of butter and pour into a 13 x 9 baking dish.

Next evenly spread all of your shredded chicken across that butter. Don’t mix.

Then take your frozen peas and carrots and spread those evenly across the top of your chicken. Again, don’t mix. Once you layer it with the peas and carrots, season it with salt, pepper, and onion powder.

In a medium-sized bowl whisk together a box of Red Lobster Cheddar Bay Biscuit mix, the seasoning packet that comes with the biscuit mix, and 2 cups of milk. Once all is combined, pour evenly over your chicken and veggies. Don’t Mix!!

Either rinse out (or don’t) the medium-sized bowl you just used or you can grab another one. In your bowl whisk together one can of Cream of Chicken Soup and 2 cups of chicken broth. Then pour all of that evenly across your casserole. Again Do Not Mix!

Yes, it will look gross and yes you will want to mix everything together but DON’T. After you have poured over the soup and broth, place the dish inside your oven at 350° for 50-60 minutes. It baked just perfectly for me right at 55 minutes. Once finished, let it sit for about 10 minutes if you can before serving. But that’s it.

  • Crockpot (if you don't have a rotisserie chicken and need to cook chicken breast)

Ingredients
  

  • 1 Roisserie Chicken (picked from the bone and shredded)
  • 2 Cups Chicken Broth
  • 10.5 OZ Can of Condensed Cream of Chicken Soup
  • 1 Box Red Lobsters Cheddar Bay Biscuit Mix
  • 1 Stick Butter (melted)
  • 12 OZ Bag Frozen Peas and Carrots
  • 2 Cups Milk
  • Onion Powder (measure with your heart)
  • Salt and Pepper (to taste)

Instructions
 

  • Preheat oven to 350°
  • Melt and pour the butter in the 13×9 casserole dish
  • Spread the chicken evenly across the melted butter, don't mix
  • Evenly pour the frozen bag of peas and carrots across the chicken, don't mix
  • Season with onion powder, salt and pepper.
  • In a seperate bowl whisk together the box of cheddar bay biscuit mix, the seasoning packet it comes with, and 2 cups of milk. Evenly pour over your chicken and veggies. Don't Mix.
  • Using the same bowl or grabbing a clean one whisk together the can of soup and 2 cups of chicken broth. Evenly pour over everything else. Don't Mix
  • Place in the over at 350° for 50-60 minutes.
  • Let sit for about 10 minutes if you can once it comes out of the oven.
  • Enjoy!

Notes

If you do not have a rotisserie chicken on hand feel free to use 3-4 cooked and shredded chicken breasts in its place. 
I will throw cook mine in the crockpot that morning so that the chicken is cooked and ready to be used in the casserole that evening. My steps for that are as follows: In your crockpot place raw chicken, 32oz carton of chicken broth, whole onion peeled, 2 dried bay leaves, salt, and pepper to taste. Cook on low for 4-6 hours or if the chicken is frozen cook on low for 6-8 hours.
If you don’t have a deep baking dish, a regular one is fine just be sure to place on a cookie sheet in case it spills over while cooking.
