Vegetable soup is a fall favorite of mine. Adding all the meat is the only way my husband will eat it. Saying he’s a carnivore is an understatement. “I have to have a meat with every meal or it isn’t a meal at all Megan” (I say in my best Ryan impression). I’m sure many of you can relate.
I love soup. I even make soup during the summer months. My family doesn’t care too much for that. For some reason they are all brain washed to believe it is a cold season meal only. I don’t see what the big deal is. When I cook dinner it’s hot whether it’s soup or roast beef.(Insert eye roll)
This recipe ranks up there with Grandma’s homemade vegetable beef soup. Only my Grandma didn’t add any meat and hers tasted like all she did was dump a couple of cans of Tomato Soup and Veggie All into a pot and heated it up. Blah!
Don’t worry, this is NOT my Grandma’s recipe. As you can see, mine has so much meat you can barely see any vegetables. Needless to say it’s husband approved.

Let’s Gather Our Ingredients:
- 1 lb ground beef
- 1 lb stew meat
- 2 cans beef broth
- 1 can petite diced tomatoes
- 3 cans veggie all
- 1 can tomato soup
- small can whole kernel corn
- noodles (optional)
- minced onion
- salt
- pepper
- dried parsley
- dried basil
First things first, let’s brown the meat. In a 12″ frying pan on medium heat cook both the hamburger and stew meat with 2 tbsp minced onion and 1 tsp salt.
If my grocery store has it, I prefer to get beef tips or I will even fix a roast for dinner the night before and add the leftovers to the vegetable soup over the stew meat, it’s so good. It’s honestly whatever you prefer. My man just likes lots of meat so that’s what I provide.
Of course if you aren’t a have to have all the meat kinda person, just veto some or veto all and make it just Vegetable Soup. There’s no right or wrong. Add more veggies if you like. If I have okra on hand I throw that shit in there too.
Instead of minced onion you can chop up a regular onion. I’m just lazy and kiddos freak if they see onion (insert eye roll). The minced onion is so tiny they never notice and I still get the much needed flavor.
Once your meat is cooked be sure to drain the grease.
In a 6 quart pot combine 2 cans beef broth, 1 can petite diced tomatoes (do not drain), 3 cans mixed veggies (drained), 1 can tomato soup, 1 small can sweet whole kernel corn (drained), 1/3 cup noodles (cooked according to the back of the box), 1 tsp parsley flakes, 1/2 tsp dried basil, and salt/pepper to taste.
Don’t forget to add all your cooked meat to the pot and stir everything until well combined.
After you bring it to a boil, cover with a lid and let simmer for at least 30 minutes.
That’s it! So easy. All you do it brown meat, dump everything into one pot, and walk away until it’s heated all the way through. Easy Peasy Lemon Squeezy!!

Hearty Vegetable Beef Soup Recipe
Ingredients
- 1 lb ground beef
- 1 lb stewed meat or beef tips cut stewed meat into smaller bites
- 2 tbsp minced onion
- 1 tsp salt
- 2 15oz cans beef broth
- 1 15oz can petite diced tomatoes
- 3 15oz cans mixed veggies drained
- 1 8oz can sweet whole kernel corn drained
- 1 10oz can condensed tomato soup
- ⅓ cup elbow noodles (optional) cook according to the box
- 1 tsp parsley flakes
- ½ tsp dried basil
- salt and black pepper to taste
Instructions
- In a large pan on medium heat brown hambuger, stewed meat, onion, and salt until no longer pink.
- In a 6 qt pot add all of the ingredients on your list including your cooked meat. Stir until well combined.
- On medium heat bring your soup to a boil. Once boiling turn down the heat and simmer uncovered for 30 minutes.
