Crockpot Cheesy Potato Soup

- 32 oz Bag Frozen Southern Style Diced Hash Browns
- 1 small Onion Diced - OR - 2 tbsp Minced Onion
- 1 tsp Celery Salt
- 32 oz Carton Chicken Broth
- 1 cup Water
- 3 tbsp Cornstarch
- 3 tbsp Milk
- 2 cups Shredded Sharp Cheddar Cheese
- 6 slices Cooked Bacon Chopped - OR - Real Bacon Bits (optional)
- ¼ cup Green Onions Chopped (optional)
In your crockpot add the bag of dice potatos, onion, celery salt, chicken broth, and water. Stir together until it is well combined.
Cover with your lid and cook on low for 6 to 8 hours.
Once finished cooking, in a small cup or bowl add cornstarch and milk. Stir until no longer lumpy. Then add to your potato soup and gently mix together until it begins to thicken.
Add shredded cheese and mix until the cheese has completely melted.
Feel free to garnish with bacon, chopped green onion and even more cheese if you would like. Goes great with cornbread, saltines, or grilled cheese sandwich.
