Something crazy simple! In this post, I am going to show you how to make the quickest and easiest beef enchiladas ever!
I’m sure I will get some heat from some of the Karens out there after sharing this recipe, but I don’t care. I know this is a redneck white girl recipe, HAHA.
Beef enchiladas are not that hard to make, to begin with. Maybe just a little time-consuming with browning the meat and assembling the tortillas. What if I told you this recipe took out all of the meat cooking and assembling out of the picture?
I know firsthand that life can get crazy at times especially when you throw in being a busy mom constantly on the go. It sucks on the nights you are rushing to get dinner on the table. Some nights you just need something ridiculously quick and simple.
This beef enchilada recipe is so crazy simple that you may not make them any other way ever again. Just kidding, but I’m sure this will be a go-to when you need something super quick. Especially if you don’t feel like actually cooking and baking all the things.
I have three kids, each playing a different sport, there are practices, then homework, and then baths. So when I can occasionally make dinner in about 30 minutes it takes away some of the end-of-the-day stress and brings me a little bit of joy. So suck it, Karen! In all honesty, no one likes eating at Mcdonald’s every night (at least I do, it gives me the shits) and it definitely sucks eating dinner at 8:00 P.M. as well. Amiright?!
Okay, I think you get the idea, stress-free dinner, check! Let’s just dive right into the meat of this post then shall we?
Beef Enchiladas
- Bag of Frozen El Monterey Beef and Bean Burritos (8pk)
- Mexican Cheese (shredded)
- Enchilada sauce
Did you see that? There are only three main items you need to complete this dinner recipe. If that doesn’t scream simple, I don’t know what will. You are literally dumping everything into a casserole dish, tossing it in the oven, and walking away for 30 minutes. Of course, I’m going to go into a little more detail than that. I just wanted to point out that when I kept repeating myself earlier it was for good reason.
The first thing you are going to want to do is to grab your 9 x 13 casserole baking dish. And then spray that dish with nonstick spray.
Next, carefully arrange the whole pack of frozen beef and bean burritos inside your baking dish. I have a family of five, so I use the entire 8 pack of burritos. You may not need that many and that’s okay. If that’s the case, you won’t need as much enchilada sauce either. Just keep that in mind.
Have you tried these frozen burritos? They are actually pretty good. The fact that I don’t have to cook hamburger meat then carefully assemble burritos is a huge win for me! It’s the little things in life, HA!
Open a 28oz can of red enchilada sauce and pour it evenly across all of your burritos.
Last, sprinkle 1-2 cups of shredded Mexican cheese across all of your burritos. Measure with your heart my friend. I use the entire two cups. The cheesier the better!
Place your dish, uncovered, in the oven at 350° for 30 minutes. While that is baking you can then start prepping all the things you would like to go on top of your enchiladas. Go wild! Our family is very boring and bland so it’s minimal for us. Haha
Topping suggestions: shredded lettuce, diced tomato, salsa, sour cream, guacamole, crushed Doritos (don’t knock it till you try it), jalapenos, and pico de gallo.

Ingredients
- 8 pack El Monterey Beef and Bean Burritos
- 28 oz Can Enchilada Sauce (Red)
- 2 cups Mexican Cheese (Shredded)
- Shredded Lettuce (optional)
- Diced Tomato (optional)
- Salsa (optional)
- Pico De Gallo (optional)
- Sour Cream (optional)
- Guacamole (optional)
- Jalapenos (optional)
- Crushed Doritos (optional)
Instructions
- Preheat oven to 350°
- Spray a 9×13 baking dish with nonstick spray
- Line your dish evenly with the whole 8 pack of burritos
- Pour the entire can of enchilada sauce evenly over all of your burrtios
- Evenly sprinkle 1-2 cups of shredded mexican cheese across the top of your burritos
- Bake uncovered at 350° for 30 minutes
- Top with your favorite toppings and Enjoy!
