Fall is my favorite season of the year. (I live in South Carolina)
Not only does the weather get cooler but, leaves begin to change colors, and you finally get to wear sweaters, leggings, hoodies, and Uggs. (FYI – I live in leggings and hoodies come fall)
But one of the ultimate reasons I love fall is it’s finally SOUP SEASON!!
Everyone begins looking for all those delicious soup recipes, myself included.
Don’t get me wrong, I will fix soup any time of the year. Ask my family.
Sometimes they get annoyed with me because it’s so hot outside yet here I am fixing us Salmon Stew for dinner, hahaha.
Yep, I’m that mom. I just love homemade soups and stews.
My favorite soup to make is my Homemade Potato Soup (it’s different from this one) with Homemade Cornbread.
That recipe is easy, just not quite as easy as the one I’m about to share. But only because there is more prep work involved and it’s not cheesy.
Moving on.
Let’s get into why you’re here to begin with, how to make Crockpot Cheesy Potato Soup.
Ingredients
- 32 oz Bag of Southern Diced Hash Browns
- 1 small Onion Diced – OR – 2 tbsp Minced Onion
- 1 tsp Celery Salt
- 32 oz Carton Chicken Broth
- 1 cup Water
- 3 tbsp Cornstarch
- 3 tbsp Milk
- 2 cups Shredded Sharp Cheddar Cheese
- 6 slices Cooked Bacon Chopped – OR – Real Bacon Bits (optional)
- ¼ cup Green Onions Chopped (optional)
Crockpot Cheesy Potato Soup
The first thing you are going to want to do is whip out that crockpot of yours.
Next, dump the entire 32 oz bag of frozen diced hash browns into the crockpot.
Then add your 32 oz carton of Chicken Broth plus 1 cup of water.
Next, either dice up a small onion or if you don’t have an onion because you forgot that one ingredient at the store, no big deal. Just add about 2 tbsp minced onion instead.
I totally thought I had onions at home and failed to pick any up at the store. So you will see I used minced onions this time.
Add whichever type of onion, diced or minced, you have along with 1 tsp celery salt.
Mix everything together until well combined.
Cover with a lid and cook on low for 6-8 hours.
Once it is finished, grab a small cup or bowl to add 3 tbsp cornstarch and 3 tbsp milk. Mix that together until it is smooth.
Then add the cornstarch/milk concoction to your crockpot and gently stir until your potato soup begins to thicken.
Lastly, add 2 cups of shredded sharp cheddar cheese. Stir that deliciousness until it has completely melted.
That’s it, friend! Add a few chopped green onions, crispy crumbled bacon, and even MORE cheese to make it taste even that much better.
Or not, it’s your bowl of soup, do what you want!
Then serve it up with some saltine crackers, sweet or homemade southern-style cornbread, or a grilled cheese sandwich.

Ingredients
- 32 oz Bag Frozen Southern Style Diced Hash Browns

- 32 oz Carton Chicken Broth
- 1 cup Water
- 3 tbsp Cornstarch
- 3 tbsp Milk

Instructions
- In your crockpot add the bag of dice potatos, onion, celery salt, chicken broth, and water. Stir together until it is well combined.
- Cover with your lid and cook on low for 6 to 8 hours.
- Once finished cooking, in a small cup or bowl add cornstarch and milk. Stir until no longer lumpy. Then add to your potato soup and gently mix together until it begins to thicken.
- Add shredded cheese and mix until the cheese has completely melted.
- Feel free to garnish with bacon, chopped green onion and even more cheese if you would like. Goes great with cornbread, saltines, or grilled cheese sandwich.
