Knorr Chicken Broccoli Rice Casserole is one of my absolute favorite casseroles. I go back for seconds and even have it for lunch the following two days afterwards. In this post, I am going to show you how to make this fantabulous chicken broccoli rice casserole.
This is such an easy dump and bake chicken broccoli rice casserole. What sets this recipe apart is the Cheez Its you add as the topping. That’s right people, Cheez Its!
When I tried this recipe it was the first time I had made anything with Cheez Its as a topping. Usually it’s Ritz crackers, which I love just as much.
I have just never thought to add Cheez Its to anything other than a small bowl for my kids as a snack. It was a total game changer.
I am so glad I was introduced to Cheez Its. They may give Ritz a run for their money, HAHA.
I found this recipe on TikTok. However, @kristinsfriends calls for white rice and I substituted it with Knorr Chicken and Broccoli Rice. It adds even more flavor.
And there are absolutely no regrets with doing that little exchange either.
Story time…
At the time I made this recipe I was on a Weight Watchers journey (it’s an on again off again kind of relationship).
This isn’t necessarily a WW friendly recipe if you know what I mean. For one serving, for me, it’s 18 points (I’m only allowed 23 in a day).
The night I made this I totally said f*ck the points and went back for seconds. Yep, that’s right, another bowl!
And guess what? I even had it for lunch the following two days. Again, NO REGRETS!
I will have you know I still lost weight that week so BAM!
The point of this little story is that’s how much I love this recipe. It’s super easy and you I swear you will love it also. If you don’t it’s whatever (eye roll).
Okay, let’s move on to this amazeballs recipe shall we?
Ingredients
- 2 Chicken Breasts OR 1 Rotisserie Chicken
- 2 Bags Knorr Chicken Broccoli Rice
- 2 Cans Cream of Chicken Soup
- 2 Cups of Chicken Broth (only 1 cup if you use a rotisserie chicken)
- 12 oz Bag Frozen Broccoli Florets
- 2 Cups Sharp Cheddar Cheese (shredded)
- 1/2 Stick Butter (melted)
- A Box of Cheez Its
- Seasonings of your choice (If you use chicken breasts over a rotisserie chicken. I used garlic powder, onion powder, salt, pepper, and seasoned salt)
Knorr Chicken Broccoli Rice Casserole
First things first preheat your oven to 350°.
Next, in a 9×13 baking dish pour both packages of the Knorr Chicken Broccoli Rice.
Then pour in both cans of Cream of Chicken soup.
Looks like a pair of googly eyes. Or for the perverts out there two saggy boobs, HAHA.
Add one cup of chicken broth. Then give everything a good stir.
Next, add your bag of frozen broccoli. The smaller the broccoli the better in my opinion.
I ended up chopping some of the florets up as I stirred everything together. Or more like I violently stabbed at the frozen broccoli to get it to chop up.
Time to add shredded chicken which you can do one of two ways; crockpot or rotisserie.
The first way is to stick two seasoned chicken breasts in a crockpot earlier that day (or even cook them the day before) so they are ready when it’s time to make this recipe.
In a crockpot add two chicken breast, one cup chicken broth, and whatever seasonings you prefer. I use garlic powder, onion powder, seasoned salt, salt, pepper, and minced onion.
Cook on low for about 6 hours shredding it once it’s finished.
This is how I chose to make this recipe this time because my shitty store didn’t have any rotisserie chickens ready at the time I went to gather all the ingredients. (eye roll)
For your second, more convenient, chicken option get a rotisserie chicken from the store. Pick it from the bones and shred it.
Once your chicken, which ever route you chose, is shredded add it to your casserole and mix everything together.
Now add one cup of shredded cheese. And for the last time, mix it all together.
You can always add the broccoli, chicken, and cheese all at once and then stir it all together. But I find it easier for me to add and stir one at a time. To each their own.
Once everything is mixed sprinkle even MORE cheese on top but don’t stir this time.
Almost done I promise.
Crush up Cheez Its and sprinkle them all over the top of your chicken rice broccoli casserole. Measure with your heart.
Do NOT skip this part either. It is what makes this casserole absolutely AMAZEBALLS!! (just sayin, haha)
Melt half a stick of butter and pour it over the top of all those delicious Cheez Its.
Now, bake at 350° for 35 minutes uncovered.
That’s it friend. Let it sit for about 10 minutes before serving and then dig in!

Equipment
- 9×13 Baking Dish
Ingredients
- 2 packages Knorr Chicken and Broccoli Rice
- 1 Rotisserie Chicken OR 2 Precooked Seasoned Chicken Breasts (I do this in the crockpot ahead of time. See notes below) (shredded)
- 2 cans Cream of Chicken Soup
- 2 cups Chicken Broth (you will only need 1 cup if you use a rotisserie chicken)
- 12 oz Bag Frozen Broccoli Florets
- 2 cups Sharp Cheddar Cheese (shredded)
- 4 tbsp Butter (melted)
- 1 box Cheez Its (crushed, you won't use the whole box)
Instructions
- Preheat your oven to 350°.
- In a 9×13 baking dish add both packs of Knorr rice, both cans of soup, and 1 cup of chicken broth. Stir until well combined.
- Add frozen broccoli then mix. Add shredded chicken then mix. Add 1 cup of cheese then mix.(you can add all 3 and then mix everything together but I find it easier to mix each one individually)
- Sprinkle a layer of cheese on top (measure with your heart), do not mix.
- Crush up Cheez Its and sprinkle them evenly across the top of your cheese layer. Measure with your heart.
- Melt half a stick of butter and pour it across your Cheez Its.
- Bake at 350° uncovered for 35 minutes.
