These little Tortilla Things are the absolute best appetizer you can bring to a party, or what I like to call appeteaser. Make them for when you host a Norwex party or football party or birthday party (yes even kids will love these things) or any type of small gathering or just make them for an afternoon snack.
And yes you read that correctly, I call them Tortilla Things. That’s what I have always called these little scoops of awesomeness because I have no idea what their actual name is. I suppose you can call them Tortilla Corn Scoops?
Actually, I don’t even know why I use the word “tortilla” because they aren’t even made with tortillas! They are made using Tostitos Scoops. Call them whatever you want, they are fabulous no matter what the name is!
I have been making these tortilla things for years now. It’s my go to if the gathering is at our house, at a near by friends house, or if I’m able to make the mixture ahead and use my friends oven once I get to where we are going. In case you didn’t know, you have to bake these little guys. You can bake ahead but they are their best fresh out of the oven or shortly out of the oven.
But I promise you the best appetizer to bring to a party is also one of the easiest appetizers to make. And it only requires five ingredients.

Let’s gather our ingredients:
- 10oz bag of Tostitos Scoops
- 8oz cream cheese (room temp)
- 8oz block jalapeno pepper jack cheese (shredded)
- 15oz can sweet whole kernel corn (drained)
- 1 egg
First thing you want to do is pre heat your oven to 425°.
While your oven is warming up start shredding your pepper jack cheese into a medium size bowl. Just a little pro tip; don’t be lazy and buy the pre shredded cheese. I can promise you it will not taste the same. I tried this only one time and that was enough for me. But if you can’t tell a difference then by all means carry on and I take back the lazy comment (work smarter not harder, unless it’s gross).
Next toss in your cream cheese. I know I said it needs to be at room temperature and it does. However I usually forget and don’t lay it out in time to soften up. So I will nuke it in the microwave in 20 second increments to get it good and soft. I usually do this even if it is at room temp. It helps with the stirring and mixing everything together part.
Drain your whole kernel corn and toss it in the same bowl as your pepper jack and cream cheese.
Last but not least add your one egg.
Stir everything together until it is mixed well.
Set all of that aside for just a smidge while you line a baking sheet with tin foil. Your baking sheet doesn’t have to be that size, it’s just the size I have on hand and is just the right size to use all of your mixture and scoops in one baking batch.
I like to pour about half the bag of Tostitos Scoops directly onto the baking sheet. It makes it easier to pick out all the “bad” scoops (broken, flat, crumbs ect.). I have an extra bowl set out so I can easily put all the duds in till I’m finished. Then I pour the dud bowl of chips back into the bag from which they came and save for salsa dipping later on. You will most likely use every single whole/put together scoop in the bag.
Carefully (you don’t want to break them) spoon a little bit of your cream cheese/corn mixture into as many scoops as you can fit on to your baking sheet or until you run out of cream cheese/corn mixture.
Once your baking sheet is full, place it in the oven at 425° for 16-20 minutes or until you start to see the cheese turn slightly brown. The cook time is entirely up to your oven. With my oven it takes exactly 18 minutes.
That’s it, your tortilla things are done!!

Ingredients
- 10 oz bag of Tostitos Scoops
- 8 oz block cream cheese room temperature/softened
- 8 oz block jalapeño pepperjack cheese shredded
- 15 oz can sweet whole kernel corn drained
- 1 egg
Instructions
- Preheat oven to 425°
- In a medium size bowl combine shredded pepperjack cheese, softened cream cheese, corn, and egg together until well combined.
- Line baking pan with tin foil. Spoon a small amount of cream cheese mixture into each individual scoop until your pan is full.
- Bake at 425° for 16-18 minutes or until the tops start to turn slightly brown.
- Enjoy!
